Spotted Babylon Snail

Spotted babylon snails are a wild-caught Asian shellfish with a heavy, spiral shell and sweet, springy meat that holds its shape and takes on seasoning well. Each batch is rinsed thoroughly to clear the sediment out of the shells before being blast-frozen, which saves a good deal of preparation at home. Eaten simply, they are one of the purest expressions of shellfish flavour: boil or steam them briefly and serve with a dipping sauce of soy, vinegar and ginger. Cooked harder, they stand up to chilli, garlic and rich spiced sauces, and the meat lifts out easily with a pin or a small fork once the snails are cooked. Supplied cleaned and frozen, ready to cook straight from the bag.
