Golden pompano is a small, round coastal fish with bright silver-gold skin and firm white meat that is unusually free of fine bones, which makes it one of the easiest whole fish to serve. Each fish is gutted and cleaned, then blast-frozen soon after landing so the flesh stays tight and sweet rather than soft. The flavour is mild and faintly nutty, and the skin crisps beautifully under heat. Steam it whole with ginger and spring onion, deep-fry it until the skin blisters and dress it with a sour-sweet sauce, pan-sear it in butter, or poach it into a light soup. Supplied as a complete cleaned fish, individually packed and deep-frozen.
