Frozen Raw Butterfly Shrimp

These raw shrimp are split down the back and deveined before freezing, with the shell and tail left on. That butterfly cut opens the meat out flat, so it cooks through quickly and evenly and curls far less in the pan. The flesh is thick, springy and faintly sweet, and the flavour stays clean because nothing has been added to it. Because they go into the pan raw rather than pre-cooked, they take on whatever you cook them with: garlic and chilli, a soy and honey glaze, or a light dusting of flour before they hit hot oil. They work equally well in an air fryer, on a grill pan, deep-fried as a starter, or laid over rice and steamed. Supplied frozen; thaw in cold water shortly before use and cook the same day.
