Wild Caught Scampi

Scampi are small, sweet langoustines, caught in deep water and frozen whole the moment they come aboard, which is what keeps their flesh so delicate. Inside the thin shell sits a narrow strip of white meat with a clean, faintly sweet flavour much closer to lobster than to an ordinary prawn, and it turns opaque and firm in under two minutes. Because they are whole and raw, they are as good eaten cold as hot: split them and serve as sashimi, lay them in a hot pan with butter and garlic and sear a minute a side, grill them briefly over charcoal, or steam them and serve with a sharp aioli. Thaw overnight in the refrigerator and use the same day.
